Grilled Portobello

1 3.5 oz. Portobello mushroom cap - 0
2 tsp EVOO - 2
2 T. feta -2
kosher salt
pepper
crushed or pressed garlic
1/2 tsp rosemary - optional

Brush 1 tsp of EVOO onto top of mushroom, sprinkle with kosher salt and pepper, and put it under the broiler-about 3 minutes.

Meanwhile mix feta with crushed garlic and rosemary. Take Portobello out of oven, flip it over. Brush with remaining tsp EVOO, and stuff cap with cheese mixture. Broil until cheese is golden.

**note**
To make an open faced sandwich, toast a slice of whole wheat or multi grain bread. Combine 1 Tbsp of either fat free, or low fat mayo with a few dashes of chipolte tobasco sauce. Spread on bread and top with sprouts, roasted red peppers and portobello mushroom. Broil as instructions state above.

Serve with a side mixed green salad with balsamic vinaigrette.

Peanut butter and banana french toast

2 slices WW bread - 1 pt
1 Tbsp creamy Peanut butter - 2
1 small - med banana - 1.5
1 egg white
1.5 T. milk
1/8 tsp vanilla
1/8 tsp sugar
pinch of salt
1/2 tsp butter - optional 0.5 Pts
1 tsp powdered sugar - optional - 0 pts

Spread 1 Tbsp Peanut butter on one slice of bread. Top with sliced banana, and other piece of bread.

In a bowl whisk together egg, milk, vanilla, sugar and salt. Dip both sides of sandwich in egg mixture and transfered to a prepared skillet (Sprayed with non stick butter flavoured spray)
Fry each side until golden.

OPTIONAL: Spread 1/2 tsp of butter on one side, and sprinkle with powdered sugar. Enjoy.

**Note**

Works well as a grilled sandwich. Omit egg mixture and butter.

Sirloin Salad

2-21/2 c. mixed greens
75g Maple Leaf Grilled Sirloin Strips
1 roma tomato sliced
1.5 T feta cheese (goat cheese is wonderful too)
1 T. walnuts
sliced red onions

4.5 POINTS(R) before your favourite dressing.

I like to use 2 tsp evoo, balsamic vinegar, garlic, grainy mustard, red wine vinegar and a shot of Franks Hot Sauce.

6.5 POINTS(R) total.

It's a wonderful filling meal.

Sin on a stick

1 large banana
1 dark chocolate cadbury thin
2 popsicle sticks
Optional 1 Tbsp chopped peanuts

Cut banana in half, insert popsicle stick into the sliced end of the banana.

Melt the thins bar and dip each banana into it, coating as well as you can.

Optional, roll each banana in 1/2 T. chopped peanuts.

Place wax paper on a small tray and lay the bananas down. Chill until set, or frozen right through.

Easy Egg Salad




Twist on an old favourite.

1 full hardboiled egg
1 hardboiled egg white
1 Tbsp Hellmans Dijonaise
Dill
salt
pepper
2 slices WW bread
alfalfa sprouts

Coarsely chop the egg and white together, add in 1 Tbsp dijonaise, dill, kosher salt and fresh ground pepper. Combine thoroughly.

Spoon onto bread and top with sprouts. SO GOOD.

*note* for added flavor, mix in some capers, and/or minced red onion and sliced tomatoes.

To lessen the points value to 2, serve on a bed of lettuce or spinach, topped with sprouts, and surrounded by tomato wedges.

Heavenly Chocolate Toast

Servings: 1

1 Egg White
2 Tbsp + 2 tsp milk
1/8 tsp sugar
1/8 tsp vanilla
1/8 tsp salt
2 slices day old bread (I use high fiber WW bread. 1 pt for 2 slices)
1 cadbury thins dark chocolate bar, halved
1 tsp butter/margarine (optional)
2 tsps of powdered sugar (optional but recommended)

In a bowl whisk together egg white, milk, sugar vanilla and salt. Place 1/2 mixture in bottom of a bowl. Place one slice of bread on top of the wet mix. Lay the cadbury thins bar on one slice of bread, and top with the other. Cover with remaining 1/2 of mixture. Let stand for 5 mins.

Melt 1 tsp of butter in a skillet and then fry sandwich until golden brown. Dust with 2 tsp powdered sugar, and serve warm.

*Note* To save 1 pt, use non stick buttered flavoured spray.

Serve with fresh strawberries and mandarin slices for a yummy breakfast or snack.

Faux Float


Most of the flavour, none of the guilt.



1 can diet pop -any flavour (I LOVE this with diet A&W rootbeer)
1-2 T. 5% cream (or milk) (0-1 pts)
mint leaf - optional
marashino cherry - optional

Pour pop over ice, add cream. Stir, and garnish with mint and cherry. If you think ahead, chill a beer mug in advance.

POINTS(R): Free!

*You can also add a drop of vanilla into the cream

Less is S'mores





1/2 Cadbury thins bar. Dark or Milk Chocolate. (1 pt)
2 low fat Honey Maid (R) Graham Crackers (1 pt)
1 Lg Marshmallow - (0 pts)

Turn broiler on low.

Place 1/2 a thins bar on 1 graham cracker, top with marshmallow. Place under broiler until gooey. Top with other graham cracker and inhale.

Like a Dream, strawberries and cream


For 1. Easily multiplied for more servings. I don't think I can keep up the cheesy menu titles for the life of this blog. We'll see.



2.5 T 5% cream (1 pt)
1 tsp sugar (o pts)
1 Tbsp + 1 tsp of ff sour cream (0 pts)
1/2 tsp orange juice (0 pts)
2/3 c. strawberries washed, hulled and sliced (optional) (0 pts)

In a small mixing bowl whip the cream and sugar with a whisk until thick but not stiff. Add the sour cream and whiskl until mixture is thoroughly combined. Continue to beat whisk while pouring in the juice.

Place strawberries in small dessert dish and cover with creamy goodness.

Total POINTS(R) Value: 1

For a change of pace sub in either Amaretto or Grand Marnier for the orange juice. Makes a great Angel food cake topper.

1 flatout bread (1-2 pts depending on flavour)
1/4-1/2 c. pizza sauce (1 pt)
1 Pillar's© Turkey bite, thinly sliced (1 pt)
10 green olives, sliced - (1 pt)
1 oz light shredded cheese (2)
3 T Carmalized red or sweet onion (optional) - 0 pts


preheat oven to 350ºF.

Place flatout bread on ungreased cookie sheet, bake for 7 minutes.

Remove from oven. Spread tomato sauce on bread, sprinkle 1/2 the cheese, top with turkey bites and olives, sprinkle with remaining half of the cheese.

Put back in the oven until cheese melts, about 7 minutes.

Total POINTS® Value = 6

For an extra POINT®, try adding 1 Tbsp of crumbled feta.

Welcome to my pantry

Just a quick intro to what this space will be. Recipe and restaurant reviews, the best bang for your buck point wise, and a little kitchen chaos.

I love cooking and baking, and I'm constantly looking for new and inventive ways to jazz up the food I eat, and to put a healthy spin on fatty favourites.

When I'm done in my kitchen, it looks as though a bomb has been detonated. Flour on the ceiling, oil on the flour, and a mountain of teetering dishes hovering in the sink. I work best in a mess, I feel I can be more creative that way.

So I look forward to sharing some favourites with you, hearing your feedback, and taking suggestions.
